Crispy Apple-and-Chicken Romaine Salads

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 (16-oz) pkg sliced bacon, chopped
  • 1 (3-count) pkg romaine lettuce hearts, chopped
  • 3 apples, cored and chopped (preferably a crisp, red variety)
  • ½ small red onion, thinly sliced
  • 1 cup chopped walnuts
  • 1 cup shredded Parmesan cheese
  • 1 cup balsamic vinaigrette

Instructions

  1. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season lightly with salt and pepper.
  2. Cook bacon in a large skillet over medium heat until crisp; drain, reserving 2 Tbsp drippings in skillet.
  3. Cook chicken in hot drippings in skillet over medium-high heat 5 to 6 minutes per side or until done; slice chicken.
  4. Toss together lettuce, apples, onion, nuts, cheese, bacon, and chicken. Divide among 6 plates; drizzle with desired amount of dressing.

  • 1 (16-oz) pkg soft dinner rolls
  • 2 Tbsp olive oil
  • 2 cloves garlic, finely minced

Side Dish Instructions

  1. Preheat oven to 400°F. Halve rolls lengthwise, and place on a rimmed baking sheet. Brush with oil, and sprinkle with garlic. Bake 5 to 8 minutes or until toasted.
