Grilled Chicken and Fresh Fruit Salad

Ingredients

  • ¼ cup fresh lime juice
  • 1 Tbsp honey
  • 1 Tbsp olive oil
  • ¾ lb boneless, skinless chicken breasts
  • 1 head romaine lettuce, shredded
  • ½ small seedless watermelon, cut into chunks
  • 1 cup blueberries
  • ½ cup chopped walnuts

Instructions

  1. Whisk together lime juice, honey, and oil. Pour half of mixture into a large zip-top plastic freezer bag. Reserve remaining lime juice mixture for later use.
  2. Cut chicken in half crosswise. Pound to ½-inch thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; season lightly with salt and pepper. Add chicken to bag with lime mixture; seal bag, and chill 1 hour.
  3. Preheat grill or grill pan to medium-high heat. Remove chicken from marinade, discarding marinade. Grill chicken, covered, 4 to 5 minutes per side or until done.
  4. Arrange lettuce, watermelon, blueberries, and nuts on 2 plates; drizzle with remaining lime juice mixture. Chop chicken, and serve over salad.
