Coconut-Curry Steak Bowls

Ingredients

  • ½ (12-oz) pkg broccoli florets
  • 1 (8.5-oz) pouch microwavable brown basmati rice
  • ¾ lb flank steak, thinly sliced
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp sesame oil
  • 1 red bell pepper, sliced
  • 1 (7-oz) pkg coconut curry simmer sauce (such as Saffron Road)
  • 2 Tbsp chopped fresh basil

Instructions

  1. Cook broccoli and rice according to package directions.
  2. Meanwhile, sprinkle steak with salt and pepper. Cook in hot oil in a large nonstick skillet over medium-high heat 2 to 3 minutes or to desired doneness. Remove from skillet, and keep warm.
  3. Add bell pepper; cook 2 to 3 minutes or until tender. Add beef, broccoli, and simmer sauce to skillet. Cook 2 to 3 minutes or until thoroughly heated.
  4. Spoon rice into 3 bowls; top with beef mixture. Sprinkle with basil.
