Coconut-Curry Steak Bowls
Ingredients
- ½ (12-oz) pkg broccoli florets
- 1 (8.5-oz) pouch microwavable brown basmati rice
- ¾ lb flank steak, thinly sliced
- ½ tsp salt
- ¼ tsp pepper
- 1 Tbsp sesame oil
- 1 red bell pepper, sliced
- 1 (7-oz) pkg coconut curry simmer sauce (such as Saffron Road)
- 2 Tbsp chopped fresh basil
Instructions
- Cook broccoli and rice according to package directions.
- Meanwhile, sprinkle steak with salt and pepper. Cook in hot oil in a large nonstick skillet over medium-high heat 2 to 3 minutes or to desired doneness. Remove from skillet, and keep warm.
- Add bell pepper; cook 2 to 3 minutes or until tender. Add beef, broccoli, and simmer sauce to skillet. Cook 2 to 3 minutes or until thoroughly heated.
- Spoon rice into 3 bowls; top with beef mixture. Sprinkle with basil.
