Pumpkin Spice-Seedy "Granola" Cereal

Ingredients
- ½ cup raw sunflower seeds
- ½ cup raw pepitas (pumpkin seeds)
- 1 cup unsweetened dried cranberries
- ¼ cup chia seeds
- ¼ cup pure maple syrup
- ½ tsp pure vanilla extract
- ½ tsp pumpkin pie spice
- ⅛ tsp salt
- 1 to 2 (13.5-oz) cans unsweetened coconut milk
Instructions
- Preheat oven to 350°F. Combine all ingredients except coconut milk in a large bowl; toss.
- Spread seed mixture on a large rimmed baking sheet lined with parchment paper.
- Bake 12 to 15 minutes or until seeds are golden, stirring halfway through baking.
- Cool mixture on baking sheet on a wire rack. Break seed mixture into large pieces.
- Divide "granola" among 4 bowls; serve with desired amount of coconut milk.
