Pumpkin Spice-Seedy "Granola" Cereal

Ingredients

  • ½ cup raw sunflower seeds
  • ½ cup raw pepitas (pumpkin seeds)
  • 1 cup unsweetened dried cranberries
  • ¼ cup chia seeds
  • ¼ cup pure maple syrup
  • ½ tsp pure vanilla extract
  • ½ tsp pumpkin pie spice
  • ⅛ tsp salt
  • 1 to 2 (13.5-oz) cans unsweetened coconut milk

Instructions

  1. Preheat oven to 350°F. Combine all ingredients except coconut milk in a large bowl; toss.
  2. Spread seed mixture on a large rimmed baking sheet lined with parchment paper.
  3. Bake 12 to 15 minutes or until seeds are golden, stirring halfway through baking.
  4. Cool mixture on baking sheet on a wire rack. Break seed mixture into large pieces.
  5. Divide "granola" among 4 bowls; serve with desired amount of coconut milk.
