Sheet Pan Baked Eggs over Roasted Veggies

Ingredients

  • 1 ( 8-oz) pkg sliced mushrooms
  • 1 (12-oz) pkg broccoli florets
  • 1 red bell pepper, chopped
  • 3 Tbsp avocado oil
  • ¼ tsp dried thyme
  • 8 large eggs

Instructions

  1. Preheat oven to 400°F. Combine mushrooms, broccoli, bell pepper, oil, thyme, and desired amount of salt and pepper on a rimmed baking sheet lined with parchment paper.
  2. Spread vegetables in a single layer. Bake 10 minutes or until vegetables start to brown; stir.
  3. Make 8 indentations in vegetables; crack an egg into each indentation. Sprinkle with desired amount of salt and pepper.
  4. Bake 8 to 10 minutes or until eggs are cooked to desired doneness.
