Orange and Pistachio Chia Pudding

Ingredients

  • 1 orange
  • ⅓ cup chia seeds
  • 1 (13.5-oz) can unsweetened coconut milk
  • 2 Tbsp water
  • 3 Tbsp pure maple syrup, divided
  • 1 tsp pure vanilla extract
  • ½ tsp ground cinnamon
  • ⅛ tsp salt
  • ½ cup raw pistachios

Instructions

  1. Grate orange to remove zest. Combine zest, chia seeds, coconut milk, water, 1 Tbsp syrup, vanilla, cinnamon, and salt. Chill overnight.
  2. Toast nuts in a dry skillet over medium heat 2 to 3 minutes or until fragrant.
  3. Peel and section orange; coarsely chop sections. Top pudding with nuts, chopped orange, and 2 Tbsp syrup.
