Orange and Pistachio Chia Pudding

Ingredients
- 1 orange
- ⅓ cup chia seeds
- 1 (13.5-oz) can unsweetened coconut milk
- 2 Tbsp water
- 3 Tbsp pure maple syrup, divided
- 1 tsp pure vanilla extract
- ½ tsp ground cinnamon
- ⅛ tsp salt
- ½ cup raw pistachios
Instructions
- Grate orange to remove zest. Combine zest, chia seeds, coconut milk, water, 1 Tbsp syrup, vanilla, cinnamon, and salt. Chill overnight.
- Toast nuts in a dry skillet over medium heat 2 to 3 minutes or until fragrant.
- Peel and section orange; coarsely chop sections. Top pudding with nuts, chopped orange, and 2 Tbsp syrup.
