Maple-Bacon Pancakes

Ingredients
- 8 slices nitrite-free bacon
- 4 large eggs
- 2 bananas, mashed
- 1 tsp pure vanilla extract
- ¼ cup coconut flour
- ½ tsp salt
- ¼ tsp baking soda
- 1 Tbsp coconut oil
- Pure maple syrup
Instructions
- Cook bacon in a large skillet over medium-high heat until crisp; drain. Crumble bacon.
- Beat eggs and remaining ingredients except oil and syrup at medium speed with a handheld mixer until smooth. Stir in bacon.
- Melt oil in a large nonstick skillet or griddle over medium heat. Pour about ¼ cup batter for each pancake into skillet. Cook until tops are covered with bubbles; turn and cook other sides.
- Drizzle with desired amount of syrup.
