Maple-Bacon Pancakes

Ingredients

  • 8 slices nitrite-free bacon
  • 4 large eggs
  • 2 bananas, mashed
  • 1 tsp pure vanilla extract
  • ¼ cup coconut flour
  • ½ tsp salt
  • ¼ tsp baking soda
  • 1 Tbsp coconut oil
  • Pure maple syrup

Instructions

  1. Cook bacon in a large skillet over medium-high heat until crisp; drain. Crumble bacon.
  2. Beat eggs and remaining ingredients except oil and syrup at medium speed with a handheld mixer until smooth. Stir in bacon.
  3. Melt oil in a large nonstick skillet or griddle over medium heat. Pour about ¼ cup batter for each pancake into skillet. Cook until tops are covered with bubbles; turn and cook other sides.
  4. Drizzle with desired amount of syrup.
