Baked Egg and Sausage Cups

Ingredients

  • Turkey sausage patties (from Turkey Breakfast Sausage with Pears recipe)
  • 8 large eggs
  • 2 Tbsp chopped green onion
  • ½ tsp salt
  • ¼ tsp pepper

Instructions

  1. Preheat oven to 350°F. Crumble turkey sausage. Divide sausage among 4 muffin cups or (6- to 8-oz) ramekins greased with avocado oil.
  2. Crack 2 eggs in each muffin cup or ramekin. Sprinkle with onion, salt, and pepper.
  3. Bake 15 to 18 minutes or until eggs are set.

Side Dish Ingredients

  • 1 grapefruit
  • 1 avocado, sliced

Side Dish Instructions

  1. Peel and section grapefruit over a bowl, reserving juice.
  2. Add grapefruit sections and avocado to bowl; toss.
