Baked Egg and Sausage Cups
Avocado and Grapefruit Salad
Ingredients
- Turkey sausage patties (from Turkey Breakfast Sausage with Pears recipe)
- 8 large eggs
- 2 Tbsp chopped green onion
- ½ tsp salt
- ¼ tsp pepper
Instructions
- Preheat oven to 350°F. Crumble turkey sausage. Divide sausage among 4 muffin cups or (6- to 8-oz) ramekins greased with avocado oil.
- Crack 2 eggs in each muffin cup or ramekin. Sprinkle with onion, salt, and pepper.
- Bake 15 to 18 minutes or until eggs are set.
Side Dish Ingredients
- 1 grapefruit
- 1 avocado, sliced
Side Dish Instructions
- Peel and section grapefruit over a bowl, reserving juice.
- Add grapefruit sections and avocado to bowl; toss.
