Barbecue Meat Loaf

Rosemary-Garlic Sweet Potatoes and Steamed Green Beans

Ingredients

  • 1 (6-oz) can BPA-free organic tomato paste
  • 2 Tbsp low-sodium soy sauce
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp honey
  • 1½ lb ground round
  • 2 cloves garlic, minced
  • ¼ cup low-sodium beef broth
  • ½ cup panko breadcrumbs (preferably whole wheat)
  • ¾ tsp salt
  • ¾ tsp pepper
  • 2 large eggs, lightly beaten

Instructions

  1. Preheat oven to 375°F. Stir together tomato paste, soy sauce, vinegar, and honey; set aside.
  2. Gently combine beef, garlic, broth, panko, salt, pepper, and eggs; place mixture in a 9- x 5-inch loaf pan. Brush tomato paste mixture over loaf.
  3. Bake 50 minutes to 1 hour or until meat is no longer pink in center and a meat thermometer reads at least 165°F.

Side Dish Ingredients

  • 3 large organic sweet potatoes, peeled and cut into chunks
  • 2 Tbsp olive oil
  • 1 Tbsp dried rosemary
  • 2 tsp garlic powder
  • 1 tsp salt, divided
  • 1 tsp pepper, divided
  • 1½ lb green beans, trimmed
  • ½ cup low-sodium beef broth

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together potatoes and oil on a rimmed baking sheet. Sprinkle with rosemary, garlic powder, and ½ tsp each salt and pepper; toss. Bake 30 minutes or until tender and browned, turning once.
  2. Meanwhile, place green beans, broth, and ½ tsp each salt and pepper in a large nonstick skillet. Bring to a boil; cover, reduce heat, and simmer 5 minutes or until beans are tender.
