Mediterranean Burgers
Olive, Grape Tomato, and Cucumber Salad
Ingredients
- 2 lb ground beef
- 1 (4-oz) pkg crumbled feta cheese
- 1 tsp dried oregano
- ½ tsp salt
- ½ tsp pepper
- 6 Tbsp olive-oil mayonnaise
- 1 tsp lemon zest
- 6 hamburger buns (preferably whole wheat)
- 1 (12-oz) jar organic roasted red peppers, drained and sliced
- 1½ cups organic baby spinach
Instructions
- Preheat grill to medium heat. Combine beef, cheese, oregano, salt, and pepper; shape into 6 patties. Grill, covered, 4 to 5 minutes per side or until no longer pink.
- Combine mayonnaise and lemon zest; spread on cut sides of buns. Serve burgers on buns with roasted red peppers and spinach.
Side Dish Ingredients
- 1 (7-oz) jar pitted kalamata olives
- 1 pint organic grape tomatoes, halved
- 1 organic English cucumber, thinly sliced
- ½ cup refrigerated organic balsamic vinaigrette (such as Tessemae's)

- Combine all ingredients in a bowl; chill until ready to serve.
