Mediterranean Burgers

Olive, Grape Tomato, and Cucumber Salad

Ingredients

  • 2 lb ground beef
  • 1 (4-oz) pkg crumbled feta cheese
  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp pepper
  • 6 Tbsp olive-oil mayonnaise
  • 1 tsp lemon zest
  • 6 hamburger buns (preferably whole wheat) 
  • 1 (12-oz) jar organic roasted red peppers, drained and sliced
  • 1½ cups organic baby spinach

Instructions

  1. Preheat grill to medium heat. Combine beef, cheese, oregano, salt, and pepper; shape into 6 patties. Grill, covered, 4 to 5 minutes per side or until no longer pink.
  2. Combine mayonnaise and lemon zest; spread on cut sides of buns. Serve burgers on buns with roasted red peppers and spinach.

Side Dish Ingredients

  • 1 (7-oz) jar pitted kalamata olives
  • 1 pint organic grape tomatoes, halved
  • 1 organic English cucumber, thinly sliced
  • ½ cup refrigerated organic balsamic vinaigrette (such as Tessemae's)

Side Dish Instructions

  1. Combine all ingredients in a bowl; chill until ready to serve.
