Skillet Pork Chops, Apples, and Swiss Chard
Maple Mashed Sweet Potatoes
Ingredients
- 6 bone-in pork chops
- ¾ tsp salt, divided
- ½ tsp pepper
- ½ tsp dried sage
- 2 Tbsp olive oil
- 1 red onion, halved and sliced
- 3 organic Honeycrisp apples, cored and sliced
- 1 bunch Swiss chard, chopped
- ¼ cup low-sodium chicken broth
- 3 Tbsp apple cider vinegar
Instructions
- Sprinkle pork with ½ tsp each salt, pepper, and sage. Cook pork, in batches, in hot oil in a large cast-iron skillet 2 minutes per side or until browned.
- Surround pork with onion, apples, and Swiss chard; sprinkle vegetables with ¼ tsp salt. Pour broth and vinegar over mixture; cover and cook over medium heat 10 minutes or until pork is done and vegetables are tender.

- 3 lb organic sweet potatoes
- ⅓ cup pure maple syrup
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp milk
Side Dish Instructions
- Preheat oven to 400°F. Bake potatoes 45 minutes to 1 hour or until very tender.
- Peel potatoes, and place in a saucepan. Add syrup, salt, pepper, and milk; mash to desired consistency. Cook over medium-high heat 5 minutes or until thoroughly heated.
