Crispy Pork Cutlets
Apple-Brussels Sprouts SlawIngredients
- 1¼ cups panko breadcrumbs (preferably whole wheat)
- ⅔ cup organic roasted garlic mayonnaise (such as Hellmann's)
- ¼ tsp kosher salt
- ½ tsp pepper
- 1½ lb thin boneless pork chops
- 2 Tbsp olive oil
- Lemon wedges
Instructions
- Place panko in a shallow bowl. Stir together mayonnaise, salt, and pepper in a second bowl. Dip pork in mayonnaise mixture; dredge in panko, shaking off excess.
- Cook pork, in 2 batches, in 1 Tbsp hot oil per batch in a large nonstick skillet over medium-high heat 2 to 3 minutes per side or until done. Serve with lemon wedges.

- 1 (16-oz) pkg shaved Brussels sprouts
- 2 Honeycrisp apples, thinly sliced
- ¼ cup sweetened dried cranberries
- ¼ cup extra virgin olive oil
- 2 Tbsp apple cider vinegar
- 1 Tbsp honey
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Toss together all ingredients in a large bowl.
