Crispy Pork Cutlets

Apple-Brussels Sprouts Slaw

Ingredients

  • 1¼ cups panko breadcrumbs (preferably whole wheat)
  • ⅔ cup organic roasted garlic mayonnaise (such as Hellmann's)
  • ¼ tsp kosher salt
  • ½ tsp pepper
  • 1½ lb thin boneless pork chops
  • 2 Tbsp olive oil
  • Lemon wedges

Instructions

  1. Place panko in a shallow bowl. Stir together mayonnaise, salt, and pepper in a second bowl. Dip pork in mayonnaise mixture; dredge in panko, shaking off excess.
  2. Cook pork, in 2 batches, in 1 Tbsp hot oil per batch in a large nonstick skillet over medium-high heat 2 to 3 minutes per side or until done. Serve with lemon wedges.

  • 1 (16-oz) pkg shaved Brussels sprouts
  • 2 Honeycrisp apples, thinly sliced
  • ¼ cup sweetened dried cranberries
  • ¼ cup extra virgin olive oil
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp honey
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
