Mini Spinach-Turkey Meat Loaves
Garlic-Thyme Mashed Potatoes and Green Salad
Ingredients
- ¾ lb ground turkey
- 1 cup chopped baby spinach
- ¾ cup Italian panko breadcrumbs
- ¼ tsp salt
- ¼ tsp pepper
- 1 large egg, lightly beaten
- 1 Tbsp butter
- 1 (4-oz) pkg sliced gourmet mushrooms (see Note)
- 1 Tbsp balsamic vinegar
- ¼ cup low-sodium chicken broth
Instructions
- Preheat oven to 450°F. Gently mix together turkey, spinach, breadcrumbs, salt, pepper, and egg using your hands.
- Shape mixture into 3 small loaves. Place on a wire rack on a foil-lined rimmed baking sheet. Bake 20 minutes or until no longer pink in centers.
- Meanwhile, melt butter in a large skillet over medium-high heat; add mushrooms, and cook until browned and tender. Add vinegar and broth; bring to a boil, reduce heat, and simmer 2 minutes or until liquid is slightly reduced.
- Cut each meat loaf into thick slices; spoon sauce over loaves.
Side Dish Ingredients
- 1 (24-oz) pkg refrigerated mashed potatoes (such as Simply Potatoes)
- ½ (8-oz) carton reduced-fat sour cream
- ½ Tbsp minced garlic
- ½ Tbsp chopped fresh thyme
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 (9-oz) pkg chopped romaine lettuce
- 1 cup grape tomatoes, halved
- ¼ cup refrigerated balsamic vinaigrette
Side Dish Instructions
- Cook potatoes according to package directions; reserve half of potatoes for a future meal. Stir sour cream, garlic, thyme, salt, and pepper into remaining potatoes before serving.
- Toss together romaine, tomatoes, and vinaigrette in a bowl.
