Mini Spinach-Turkey Meat Loaves

Garlic-Thyme Mashed Potatoes and Green Salad

Ingredients

  • ¾ lb ground turkey
  • 1 cup chopped baby spinach
  • ¾ cup Italian panko breadcrumbs
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 large egg, lightly beaten
  • 1 Tbsp butter
  • 1 (4-oz) pkg sliced gourmet mushrooms (see Note)
  • 1 Tbsp balsamic vinegar
  • ¼ cup low-sodium chicken broth

Instructions

  1. Preheat oven to 450°F. Gently mix together turkey, spinach, breadcrumbs, salt, pepper, and egg using your hands.
  2. Shape mixture into 3 small loaves. Place on a wire rack on a foil-lined rimmed baking sheet. Bake 20 minutes or until no longer pink in centers.
  3. Meanwhile, melt butter in a large skillet over medium-high heat; add mushrooms, and cook until browned and tender. Add vinegar and broth; bring to a boil, reduce heat, and simmer 2 minutes or until liquid is slightly reduced.
  4. Cut each meat loaf into thick slices; spoon sauce over loaves.

Side Dish Ingredients

  • 1 (24-oz) pkg refrigerated mashed potatoes (such as Simply Potatoes)
  • ½ (8-oz) carton reduced-fat sour cream
  • ½ Tbsp minced garlic
  • ½ Tbsp chopped fresh thyme
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 (9-oz) pkg chopped romaine lettuce
  • 1 cup grape tomatoes, halved
  • ¼ cup refrigerated balsamic vinaigrette

Side Dish Instructions

  1. Cook potatoes according to package directions; reserve half of potatoes for a future meal. Stir sour cream, garlic, thyme, salt, and pepper into remaining potatoes before serving.
  2. Toss together romaine, tomatoes, and vinaigrette in a bowl.
