N'awlins Cajun Beef and Grits

Ingredients

  • 2 tsp canola oil
  • 3½ lb boneless beef chuck, trimmed and cut into 1-inch chunks
  • Kosher salt
  • Black pepper
  • 3 red peppers, seeded and chopped
  • 1 large onion, chopped
  • 3 stalks celery, chopped
  • 3 cloves garlic, chopped
  • 1 (14-oz) can diced tomatoes, drained
  • ¼ cup tomato paste
  • 2 tsp Cajun or Creole seasoning
  • 2 cups grits
  • 2 cups shredded sharp Cheddar cheese
  • Finely chopped parsley, for serving

Instructions

  1. Add oil to Instant Pot and press [Saute]. Pat beef dry with paper towels; season all over with ½ tsp salt and in batches, brown on two sides, 5 to 8 minutes. Transfer to a bowl. Add peppers, onion, celery and garlic and cook, stirring for 3 minutes.
  2. Add diced tomatoes and tomato paste and cook, stirring for 2 minutes. Stir in Cajun seasoning, then and beef and turn to coat; press [CANCEL].
  3. Cover and lock the lid and press SLOW COOK LOW and cook until the beef is very tender, 7 to 8 hours.
  4. One hour before ready to serve, in large covered saucepot, bring 10 cups water and ¾ tsp salt to a boil. Slowly whisk in grits. Reduce heat and simmer, whisking often, until grits are tender, 30 to 40 minutes. Remove from heat. Stir in Cheddar and ¾ tsp black pepper. Serve beef over grits, sprinkled with parsley.
