Veggie-Smothered Turkey Burgers

Sweet Potato Puffs and Orange-Butter Lettuce with Cilantro

Ingredients

  • 1 (20-oz) pkg ground turkey
  • 2 Tbsp salt-free Montreal steak seasoning
  • 2 tsp Worcestershire sauce
  • 2 Tbsp canola oil
  • 2 large green bell pepper, cut into strips
  • 1½ cups thinly sliced onion
  • 1 (16-oz) pkg sliced mushrooms
  • 4 cloves garlic, minced
  • ½ tsp salt
  • 2 Tbsp cornstarch
  • 1¾ cups low-sodium chicken broth

Instructions

  1. Combine ground turkey, seasoning and worcestershire sauce  in a bowl. Shape into 6 patties.
  2. Heat 1 Tbsp oil in skillet over medium-high heat. Cook burgers 4 to 5 minutes per side or until no longer pink. Remove from skillet; keep warm.
  3. Heat 1 Tbsp oil in skillet; add bell pepper, onions, mushrooms, garlic, and salt, and cook 5 minutes or until tender.
  4. Whisk together cornstarch and broth; pour into skillet. Cook, stirring constantly, 2 to 4 minutes or until sauce is thickened and vegetables are tender.
  5. Top burgers with vegetables and sauce.

Side Dish Ingredients

  • 1 (20-oz) pkg frozen sweet potato puffs
  • 1½ (6-oz) pkg butter lettuce salad
  • 3 oranges, peeled and sectioned
  • ¾ cup light raspberry walnut dressing
  • ¼ cup chopped fresh cilantro

Side Dish Instructions

  1. Bake potato puffs according to package directions.
  2. Combine lettuce, oranges, and dressing in a salad bowl; toss until blended; sprinkle with cilantro.
  3. Serve potato puffs and salad alongside burgers.
