Chicken Sausage with Roasted Potatoes

Ingredients

  • 6 (3-oz) chicken-apple sausage links, sliced
  • 2 lb red potatoes, cut into ½-inch wedges
  • 3 green bell peppers, coarsely chopped
  • 2 onions, cut into wedges
  • 3 Tbsp canola oil
  • 1½ tsp dried fennel seeds
  • 1 tsp smoked paprika (or regular paprika)
  • ¾ tsp garlic powder
  • ½ tsp salt

Instructions

  1. Preheat oven to 400°F. Place sausage, potatoes, bell pepper and onion on 2 foil-lined baking sheets coated with cooking spray.
  2. Drizzle with oil, and sprinkle with fennel seeds, paprika and garlic powder. Toss, and spread in a single layer.
  3. Bake 30 minutes, rotating pans and stirring every 10 minutes, or until potatoes are tender.
  4. Remove from oven, and sprinkle with salt. Pull up edges of foil to seal mixture, and let stand 10 minutes.

Side Dish Ingredients

  • 4 tomatoes, sliced
  • 2 Tbsp balsamic glaze
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Arrange tomato slices on a platter.
  2. Drizzle with balsamic glaze, and sprinkle evenly with salt and pepper.
