Spicy Orange-Glazed Salmon

Ingredients

  • 1½ cups fresh orange juice
  • 3 Tbsp low-sodium soy sauce
  • ½ tsp crushed red pepper
  • 6 (4-oz) salmon fillets

Instructions

  1. Preheat oven to 450°F. Bring orange juice, soy sauce and crushed red pepper to a boil in a medium saucepan over high heat; boil 4 minutes or until mixture is syrupy.
  2. Place salmon, skin side down, on a foil-lined baking sheet coated with cooking spray. Brush orange juice glaze over fillets.
  3. Bake 10 to 12 minutes or until fish flakes with a fork. Sprinkle with black pepper to taste.

Side Dish Ingredients

  • 2 lb carrots, cut into 1-inch pieces
  • 1½ Tbsp canola oil
  • 4 cups frozen lima beans
  • 1 Tbsp light butter with canola oil
  • 1½ tsp Dijon mustard

Side Dish Instructions

  1. Preheat oven to 450°F. Toss carrots and oil on a baking sheet with cooking spray; spread in a single layer. Bake 18 minutes or until carrots are tender.
  2. Cook beans according to package directions; toss with light butter and mustard.
  3. Serve carrots and beans alongside fish.
