Spicy Orange-Glazed Salmon
Roasted Carrots and Lima Beans
Ingredients
- 1½ cups fresh orange juice
- 3 Tbsp low-sodium soy sauce
- ½ tsp crushed red pepper
- 6 (4-oz) salmon fillets
Instructions
- Preheat oven to 450°F. Bring orange juice, soy sauce and crushed red pepper to a boil in a medium saucepan over high heat; boil 4 minutes or until mixture is syrupy.
- Place salmon, skin side down, on a foil-lined baking sheet coated with cooking spray. Brush orange juice glaze over fillets.
- Bake 10 to 12 minutes or until fish flakes with a fork. Sprinkle with black pepper to taste.

- 2 lb carrots, cut into 1-inch pieces
- 1½ Tbsp canola oil
- 4 cups frozen lima beans
- 1 Tbsp light butter with canola oil
- 1½ tsp Dijon mustard
Side Dish Instructions
- Preheat oven to 450°F. Toss carrots and oil on a baking sheet with cooking spray; spread in a single layer. Bake 18 minutes or until carrots are tender.
- Cook beans according to package directions; toss with light butter and mustard.
- Serve carrots and beans alongside fish.
