Slow Cooker Hoppin' John with Collard Greens
Brown Rice
Ingredients
- 1 (16-oz) pkg dried black-eyed peas
- 1 (32-oz) carton vegetable broth
- 1 (14.5-oz) can diced tomatoes
- 1 bunch collard greens, stemmed and coarsely chopped
- 1 onion, finely chopped
- 4 stalks celery, chopped
- 4 cloves garlic, minced
- 1 Tbsp Creole seasoning
- Hot sauce
Instructions
- Soak peas according to package directions; transfer to a 6-quart slow cooker. Add all remaining ingredients except hot sauce. Cover and cook on LOW 10 hours or until beans are tender. Serve over rice with hot sauce.

- 2 cups brown rice
- 2 green onions, chopped
Side Dish Instructions
- Cook rice according to package directions. Stir in green onions; season with salt and pepper to taste.
