Barbecue Meat Loaf

Rosemary-Garlic Sweet Potatoes and Steamed Green Beans

Ingredients

  • 2 Tbsp BPA-free organic tomato paste
  • 1 Tbsp low-sodium soy sauce
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp honey
  • ¾ lb ground round
  • 1 clove garlic, minced
  • 2 Tbsp low-sodium beef broth
  • ¼ cup panko breadcrumbs (preferably whole wheat)
  • ½ tsp salt
  • ½ tsp pepper
  • 1 large egg, lightly beaten

Instructions

  1. Preheat oven to 375°F. Stir together tomato paste, soy sauce, vinegar, and honey.
  2. Gently combine beef, garlic, broth, panko, salt, pepper, and egg; place mixture in a 8- x 4-inch loaf pan. Brush tomato paste mixture over loaf.
  3. Bake 40 minutes or until meat is no longer pink in center and a meat thermometer inserted into center reads at least 165°F.

Side Dish Ingredients

  • 1 large organic sweet potato, peeled and cut into chunks
  • 1 Tbsp olive oil
  • 1 tsp dried rosemary
  • ½ tsp garlic powder
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • ¾ lb green beans, trimmed
  • ¼ cup low-sodium beef broth

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together potatoes and oil on a rimmed baking sheet. Sprinkle with rosemary, garlic powder, and ¼ tsp each salt and pepper; toss. Bake 30 minutes or until tender and browned, turning once.
  2. Meanwhile, place green beans, broth, and ¼ tsp each salt and pepper in a large nonstick skillet. Bring to a boil; cover, reduce heat, and simmer 5 minutes or until tender.
