Smoky Brown Sugar Bacon and Grapes

Ingredients

  • 12 large eggs
  • ¼ tsp crushed red pepper
  • 6 Tbsp butter, softened and divided
  • 12 slices whole-grain bread
  • 1 (8-oz) pkg sliced provolone cheese
  • 2 Roma tomatoes, thinly sliced
  • ½ cup pesto

Instructions

  1. Whisk together eggs in a large bowl until smooth; season lightly with salt and pepper. Stir in red pepper.
  2. Melt 2 Tbsp butter in a large nonstick skillet over medium heat; add eggs, and cook, stirring occasionally, until set. Remove from heat.
  3. Spread 4 Tbsp butter on one side of each bread slice. Top 6 nonbuttered sides with eggs, cheese, tomatoes, and pesto. Cover with 6 bread slices, buttered sides up.
  4. Cook sandwiches, in batches, in skillet over medium heat until bread is toasted and cheese is melted. Serve immediately.

  • ¼ cup packed brown sugar
  • 1 tsp chili powder
  • 1 (16-oz) pkg sliced bacon
  • 1 lb seedless red grapes

Side Dish Instructions

  1. Preheat oven to 350°F. Stir together sugar and chili powder in a shallow bowl; dredge bacon in mixture, pressing gently to adhere.
  2. Arrange bacon in a single layer on a lightly greased wire rack on a foil-lined rimmed baking sheet. Bake 15 to 20 minutes or until crisp. Serve with grapes.
