Chicken Thighs with Peanut Sauce

Ingredients

  • 3 Tbsp low-sodium soy sauce, divided
  • 1½ Tbsp honey, divided
  • ½ Tbsp sesame oil
  • 1½ Tbsp minced garlic
  • 1 lb boneless, skinless chicken thighs
  • 2 Tbsp chopped fresh cilantro
  • 3 Tbsp warm water
  • 3 Tbsp creamy peanut butter
  • ¼ tsp crushed red pepper

Instructions

  1. Preheat broiler. Combine 2½ Tbsp soy sauce, 1 Tbsp honey, oil, and garlic; brush over chicken on a foil-lined baking sheet. Broil on top oven rack 8 to 10 minutes per side or until done.
  2. Combine cilantro, water, peanut butter, ½ Tbsp soy sauce, ½ Tbsp honey, and red pepper. Serve sauce with chicken.

  • ¼ cup chopped fresh cilantro
