Tuscan Pork Chops

Ingredients

  • 6 boneless pork loin chops (about 2 lb)
  • 2 Tbsp olive oil
  • 1 onion, thinly sliced
  • 3 tomatoes, chopped
  • 3 cloves garlic, minced
  • ½ cup white wine (or use chicken broth)
  • ½ cup sliced fresh basil

Instructions

  1. Season pork lightly with salt and pepper. Cook pork in hot oil in a large skillet over medium heat 4 minutes per side or until browned. Remove from skillet, and keep warm.
  2. Add onion to skillet; cook 3 minutes or until just tender. Stir in tomatoes, garlic, and wine; cook, stirring often, 5 to 6 minutes or until sauce is thickened. Return pork to skillet; cook 1 minute. Sprinkle with basil.

  • 1 (16-oz) pkg tricolor coleslaw
  • 3 green onions, chopped
  • 1 (4-oz) pkg crumbled feta cheese
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp Dijon mustard
  • 3 Tbsp olive oil

Side Dish Instructions

  1. Combine coleslaw, green onions, and cheese in a bowl. Whisk together lemon juice, mustard, and oil. Pour dressing over slaw; cover and chill at least 30 minutes before serving.
