Sheet Pan Delicata Squash and Chicken

Ingredients

  • 2 lb delicata squash
  • ¼ cup olive oil
  • 3 Tbsp minced garlic
  • 2 Tbsp chopped fresh rosemary
  • 2 Tbsp whole-grain mustard
  • 2 tsp smoked paprika
  • 1 tsp salt
  • 1 tsp pepper
  • 2 lb boneless, skinless chicken breasts, halved lengthwise
  • ½ cup roasted, salted pepitas (pumpkin seeds)

Instructions

  1. Preheat oven to 425°F. Place 2 large rimmed baking sheets in oven while preheating. Halve squash lengthwise; remove seeds, and slice squash crosswise.
  2. Stir together squash and all remaining ingredients except pepitas in a bowl. Arrange in an even layer on preheated baking sheets.
  3. Bake 20 to 25 minutes or until chicken is done and squash is browned, sprinkling pepitas over chicken and squash during last 5 minutes of baking.

Side Dish Ingredients

  • 1 (10-oz) pkg mixed baby greens
  • ½ cup thinly sliced red onion
  • 1 cup pomegranate seeds (arils)
  • ⅓ cup refrigerated balsamic vinaigrette
  • ½ cup crumbled goat cheese

Side Dish Instructions

  1. Place greens, onion, and pomegranate seeds in a bowl. Drizzle with dressing; toss. Sprinkle with cheese.
