Mushroom Ravioli
Kale-Spinach Chopped SaladIngredients
- 1½ (25-oz) pkg frozen cheese ravioli
- ¼ cup butter
- 4 (4-oz) pkg sliced gourmet mushrooms
- 1 shallot, thinly sliced
- ⅔ cup white wine
- 2 Tbsp chopped fresh thyme
- ¼ tsp kosher salt
- ¼ tsp pepper
- ½ cup freshly shredded Parmesan cheese
Instructions
- Cook ravioli according to package directions.
- Meanwhile, melt butter in a nonstick skillet over medium-high heat; add mushrooms and shallot, and cook 10 minutes or until mushrooms are tender. Stir in wine, thyme, salt, and pepper; cook 3 minutes or until wine is almost evaporated.
- Add ravioli; cook 2 minutes or until thoroughly heated. Stir in cheese.

- 1 (6-oz) pkg baby spinach
- 1 (11.75-oz) pkg sweet kale salad kit (such as Fresh Express)
Side Dish Instructions
- Toss together all ingredients in a large bowl.
