Salisbury Steak Casserole

Ingredients

  • 1¼ lb 93% lean ground beef
  • 1 cup chopped onion
  • 1 (8-oz) pkg sliced mushrooms
  • 2 Tbsp all-purpose flour
  • 1¾ cups low-sodium beef broth (such as Imagine) 
  • 2 Tbsp Worcestershire sauce
  • 2 (24-oz) pkg refrigerated garlic mashed potatoes (such as Simply Potatoes)

Instructions

  1. Preheat oven to 400°F. Cook beef, onion, and mushrooms in a large ovenproof skillet until beef is browned and crumbly; drain and return to skillet.
  2. Stir in flour; cook, stirring constantly, 2 minutes. Add broth and Worcestershire. Bring to a boil, and cook, stirring often, until thickened.
  3. Meanwhile, heat potatoes according to package directions. Dollop potatoes over beef mixture. Transfer skillet to oven, and bake 20 minutes or until potatoes are lightly browned.

Side Dish Ingredients

  • 1 (16-oz) pkg frozen sweet peas
  • 1 Tbsp lemon zest
  • 1½ tsp fresh lemon juice
  • ¼ tsp salt 
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook peas according to package directions; drain well.
  2. Toss peas with lemon zest, lemon juice, salt, and pepper in a bowl.
