Chicken and Sweet Potato Chili
Mango and Mixed Greens Salad
Ingredients
- 3 cups shredded rotisserie chicken
- 3 (14.5-oz) cans diced tomatoes with green peppers and onion
- 2 (15-oz) cans pinto beans, drained and rinsed
- 6 cups low-sodium chicken broth
- 2 (16-oz) pkg peeled, cubed sweet potatoes
- 4 Tbsp minced garlic
- 2 Tbsp chili powder
- 2 tsp ground cumin
Instructions
- Combine all ingredients in a large Dutch oven. Bring to a boil; reduce heat, and simmer 20 minutes or until potatoes are tender.
Side Dish Ingredients
- 2 (5-oz) pkg mixed baby greens
- 1 mango, thinly sliced
- 3 radishes, thinly sliced
- ⅓ cup lime-cilantro vinaigrette (such as Sam's Choice)
- ¼ cup crumbled cotija cheese
Side Dish Instructions
- Combine greens, mango, and radishes in a bowl. Drizzle with dressing; toss. Sprinkle with cheese.
