Ingredients

  • 1 cup frozen seasoning blend (diced onion, bell peppers, and celery)
  • 1 Tbsp minced garlic
  • 1½ cups panko breadcrumbs (preferably whole wheat)
  • 2 large eggs, lightly beaten
  • ½ tsp salt
  • ½ tsp pepper
  • 1½ lb ground turkey
  • ¼ cup Dijon mustard
  • 6 (0.5-oz) slices low-sodium ham
  • 6 (0.66-oz) slices Swiss cheese

Instructions

  1. Preheat oven to 450°F. Microwave seasoning blend in a large bowl at HIGH 2 minutes or until tender; stir in garlic, breadcrumbs, eggs, salt, and pepper. Gently mix in turkey using your hands.
  2. Shape mixture into 6 small loaves. Place on a wire rack on a foil-lined rimmed baking sheet.
  3. Bake 15 minutes. Spread mustard over loaves, and top each with 1 slice ham and 1 slice cheese. Bake 5 minutes longer or until cheese is melted and loaves are no longer pink in centers.

Side Dish Ingredients

  • 2 Honeycrisp apples, thinly sliced
  • 1 Tbsp fresh lemon juice
  • 1 (5-oz) pkg arugula
  • 2 cups tricolor coleslaw, coarsely chopped
  • ⅓ cup refrigerated Champagne vinaigrette (such as Marzetti)
  • ¼ cup roasted, salted sunflower kernels
  • ¼ tsp pepper

Side Dish Instructions

  1. Toss together apples and lemon juice.
  2. Add arugula, slaw, apples, vinaigrette, sunflower seeds, and pepper; toss.
