Cordon Bleu Mini Turkey Meat Loaves
Apple-Sunflower Chopped Salad
Ingredients
- 1 cup frozen seasoning blend (diced onion, bell peppers, and celery)
- 1 Tbsp minced garlic
- 1½ cups panko breadcrumbs (preferably whole wheat)
- 2 large eggs, lightly beaten
- ½ tsp salt
- ½ tsp pepper
- 1½ lb ground turkey
- ¼ cup Dijon mustard
- 6 (0.5-oz) slices low-sodium ham
- 6 (0.66-oz) slices Swiss cheese
Instructions
- Preheat oven to 450°F. Microwave seasoning blend in a large bowl at HIGH 2 minutes or until tender; stir in garlic, breadcrumbs, eggs, salt, and pepper. Gently mix in turkey using your hands.
- Shape mixture into 6 small loaves. Place on a wire rack on a foil-lined rimmed baking sheet.
- Bake 15 minutes. Spread mustard over loaves, and top each with 1 slice ham and 1 slice cheese. Bake 5 minutes longer or until cheese is melted and loaves are no longer pink in centers.
Side Dish Ingredients
- 2 Honeycrisp apples, thinly sliced
- 1 Tbsp fresh lemon juice
- 1 (5-oz) pkg arugula
- 2 cups tricolor coleslaw, coarsely chopped
- ⅓ cup refrigerated Champagne vinaigrette (such as Marzetti)
- ¼ cup roasted, salted sunflower kernels
- ¼ tsp pepper
Side Dish Instructions
- Toss together apples and lemon juice.
- Add arugula, slaw, apples, vinaigrette, sunflower seeds, and pepper; toss.
