Cast-Iron Carne Asada Tacos
Mexican RiceIngredients
- ¾ lb flank steak
- 1½ Tbsp Mexican seasoning (such as McCormick Perfect Pinch), divided
- ¼ tsp kosher salt, divided
- 2 Tbsp olive oil, divided
- 1 (12-oz) pkg sliced bell pepper and onion medley
- 2 cloves garlic, minced
- 1 Tbsp fresh lime juice
- 6 soft taco-size corn tortillas, heated
- ½ cup fresh salsa
Instructions
- Sprinkle steak with ½ Tbsp seasoning and ⅛ tsp salt. Cook in 1 Tbsp hot oil in a large cast-iron skillet over medium-high heat 6 to 8 minutes per side or to desired doneness. Let stand 10 minutes before slicing across the grain.
- Meanwhile, cook bell pepper medley, garlic, 1 Tbsp seasoning, and ¼ tsp salt in 1 Tbsp hot oil in skillet 6 to 8 minutes or until browned and tender.
- Add steak and lime juice; cook 1 minute, stirring to blend. Serve in tortillas with salsa.

- ¼ cup chopped red onion
- 2 Tbsp chopped fresh cilantro
- 1 Tbsp fresh lime juice

- Cook rice according to package directions. Toss together rice and remaining ingredients.
