Grilled Teriyaki Chicken Skewers

Ingredients

  • ¼ cup soy sauce
  • 2 Tbsp honey
  • 1 Tbsp ginger paste
  • 2 Tbsp sesame oil
  • 2 lb chicken tenderloins
  • ¼ cup chopped fresh cilantro
  • 1 Tbsp toasted sesame seeds

Instructions

  1. Preheat grill to medium-high heat. Combine soy sauce, honey, ginger paste, and 1 Tbsp oil. Toss chicken with 1 Tbsp oil; thread each chicken tenderloin onto an 8-inch metal or bamboo skewer.
  2. Grill chicken, covered, 3 to 4 minutes per side or until done, basting with soy sauce mixture. Sprinkle with cilantro and sesame seeds.

  • ¼ cup sesame oil
  • 2 Tbsp rice vinegar
  • 6 heads baby bok choy, halved
  • ½ tsp kosher salt
  • ⅛ tsp crushed red pepper

Side Dish Instructions

  1. Preheat grill to medium-high heat. Brush oil and vinegar over bok choy; sprinkle with salt and red pepper.
  2. Grill bok choy, covered, 2 minutes per side or until lightly browned.
