Easy Chicken Marsala
Garlic BroccoliIngredients
- 4 boneless, skinless chicken breast halves
- ¼ cup chopped green onion
- 1 cup sliced fresh mushrooms
- ⅓ cup Marsala wine
- Salt and pepper to taste
- ⅓ cup heavy cream
- ⅛ cup milk
Instructions
- Sauté chicken in a large skillet for 15 to 20 minutes, or until cooked through and juices run clear.
- Add green onion and mushrooms and sauté until soft, then add Marsala wine and bring to a boil.
- Boil for 2 to 4 minutes, seasoning with salt and pepper to taste. Stir in cream and milk and simmer until heated through, about 5 minutes.
Side Dish Ingredients
- 2 cloves garlic, peeled
- ¾ tsp salt
- ½ bunch broccoli, cut into florets
- 2 Tbsp and 2 tsp olive oil
- 2 Tbsp red wine vinegar
- 1½ tsp Dijon mustard
- ¼ cup grated Parmesan cheese, or to taste
Side Dish Instructions
- Place garlic in a mortar dish or on a cutting board, and sprinkle with salt. Mash with a pestle or use the flat side of a knife to mash garlic and salt into a paste. Transfer to a medium bowl, and stir in olive oil, vinegar, and mustard. Add the broccoli and stir to coat. Chill for 3 hours to marinate, stirring occasionally. Sprinkle with Parmesan cheese before serving.
