Easy Chicken Marsala

Ingredients

  • 4 boneless, skinless chicken breast halves
  • ¼ cup chopped green onion
  • 1 cup sliced fresh mushrooms
  • ⅓ cup Marsala wine
  • Salt and pepper to taste
  • ⅓ cup heavy cream
  • ⅛ cup milk

Instructions

  1. Sauté chicken in a large skillet for 15 to 20 minutes, or until cooked through and juices run clear.
  2. Add green onion and mushrooms and sauté until soft, then add Marsala wine and bring to a boil.
  3. Boil for 2 to 4 minutes, seasoning with salt and pepper to taste. Stir in cream and milk and simmer until heated through, about 5 minutes.

Side Dish Ingredients

  • 2 cloves garlic, peeled
  • ¾ tsp salt
  • ½ bunch broccoli, cut into florets
  • 2 Tbsp and 2 tsp olive oil
  • 2 Tbsp red wine vinegar
  • 1½ tsp Dijon mustard
  • ¼ cup grated Parmesan cheese, or to taste

Side Dish Instructions

  1. Place garlic in a mortar dish or on a cutting board, and sprinkle with salt. Mash with a pestle or use the flat side of a knife to mash garlic and salt into a paste. Transfer to a medium bowl, and stir in olive oil, vinegar, and mustard. Add the broccoli and stir to coat. Chill for 3 hours to marinate, stirring occasionally. Sprinkle with Parmesan cheese before serving.
