Chicken Fettuccini Alfredo

Salad with Artichokes

Ingredients

  • 3 boneless, skinless chicken breast halves, cut into cubes
  • 3 Tbsp butter, divided
  • 2 cloves garlic, minced, divided
  • 1½ tsp Italian seasoning
  • ½ lb fettuccini pasta
  • ½ onion, diced
  • ½ (8-oz) pkg sliced mushrooms
  • 2 Tbsp and 2 tsp all-purpose flour
  • 1½ tsp salt
  • ½ tsp ground white pepper
  • 1½ cups milk
  • ½ cup half-and-half
  • ¼ cup and 2 Tbsp grated Parmesan cheese
  • ¼ lb shredded Colby-Monterey Jack cheese
  • 1½ Roma tomatoes, diced
  • ¼ cup sour cream

Instructions

  1. In a large skillet over medium heat combine chicken, 1 Tbsp butter, 1 clove garlic, and Italian seasoning. Cook until chicken is no longer pink inside. Remove from skillet and set aside.
  2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  3. Meanwhile, melt 2 Tbsp butter in the skillet. Sauté onion, 1 clove garlic, and mushrooms until onions are transparent.
  4. Stir in flour, salt and pepper; cook 2 minutes. Slowly add milk and half-and-half, stirring until smooth and creamy.
  5. Stir in Parmesan and Colby-Monterey Jack cheeses; stir until cheese is melted. Stir in chicken mixture, tomatoes and sour cream. Serve over cooked fettuccini.

  • 3¼ cups mixed salad greens
  • ⅜ red onion, sliced
  • ¾ (14-oz) can artichoke hearts in water, drained
  • ⅓ cup and 1 Tbsp vegetable oil
  • ⅓ cup and 1 Tbsp red wine vinegar
  • ¾ tsp seasoned salt
  • ¾ tsp ground black pepper
  • ¾ tsp garlic powder
  • 2 Tbsp and 1¼ tsp grated Parmesan cheese

Side Dish Instructions

  1. In a large bowl, combine the mixed greens, onion, and artichoke hearts.
  2. In a medium-size mixing bowl, whisk together the oil, vinegar, seasoned salt, pepper, and garlic.
  3. Pour enough dressing over salad to coat and toss well. Sprinkle with grated cheese and serve.
