Chicken Fettuccini Alfredo
Salad with ArtichokesIngredients
- 3 boneless, skinless chicken breast halves, cut into cubes
- 3 Tbsp butter, divided
- 2 cloves garlic, minced, divided
- 1½ tsp Italian seasoning
- ½ lb fettuccini pasta
- ½ onion, diced
- ½ (8-oz) pkg sliced mushrooms
- 2 Tbsp and 2 tsp all-purpose flour
- 1½ tsp salt
- ½ tsp ground white pepper
- 1½ cups milk
- ½ cup half-and-half
- ¼ cup and 2 Tbsp grated Parmesan cheese
- ¼ lb shredded Colby-Monterey Jack cheese
- 1½ Roma tomatoes, diced
- ¼ cup sour cream
Instructions
- In a large skillet over medium heat combine chicken, 1 Tbsp butter, 1 clove garlic, and Italian seasoning. Cook until chicken is no longer pink inside. Remove from skillet and set aside.
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Meanwhile, melt 2 Tbsp butter in the skillet. Sauté onion, 1 clove garlic, and mushrooms until onions are transparent.
- Stir in flour, salt and pepper; cook 2 minutes. Slowly add milk and half-and-half, stirring until smooth and creamy.
- Stir in Parmesan and Colby-Monterey Jack cheeses; stir until cheese is melted. Stir in chicken mixture, tomatoes and sour cream. Serve over cooked fettuccini.

- 3¼ cups mixed salad greens
- ⅜ red onion, sliced
- ¾ (14-oz) can artichoke hearts in water, drained
- ⅓ cup and 1 Tbsp vegetable oil
- ⅓ cup and 1 Tbsp red wine vinegar
- ¾ tsp seasoned salt
- ¾ tsp ground black pepper
- ¾ tsp garlic powder
- 2 Tbsp and 1¼ tsp grated Parmesan cheese
Side Dish Instructions
- In a large bowl, combine the mixed greens, onion, and artichoke hearts.
- In a medium-size mixing bowl, whisk together the oil, vinegar, seasoned salt, pepper, and garlic.
- Pour enough dressing over salad to coat and toss well. Sprinkle with grated cheese and serve.
