Beef Satay with Peanut Sauce
Cilantro-Mint Cucumber SaladIngredients
- ½ lb flank steak, cut into 2-inch-wide strips
- 2 Tbsp soy sauce, divided
- 1 Tbsp honey, divided
- 1 tsp dark sesame oil
- 2 cloves garlic, minced
- 1 Tbsp chopped fresh cilantro
- 2 Tbsp warm water
- 2 Tbsp creamy peanut butter
- ¼ tsp crushed red pepper
Instructions
- Preheat broiler. Thread steak onto metal or bamboo skewers (see Note). Place in an 11- x 7-inch baking dish.
- Combine 5 tsp soy sauce, 2 tsp honey, oil, and garlic; pour over kabobs. Let stand at room temperature 15 minutes, turning once. Place kabobs on a foil-lined baking sheet.
- Broil on top oven rack 5 minutes or until browned.
- Combine cilantro, water, peanut butter, 1 tsp soy sauce, 1 tsp honey, and red pepper. Serve sauce with kabobs.
Side Dish Ingredients
- 1½ Tbsp extra virgin olive oil
- ¼ tsp lime zest
- ½ Tbsp fresh lime juice
- 1 English cucumber, thinly sliced
- ½ small red onion, thinly sliced
- 2 Tbsp chopped fresh cilantro
- 1 Tbsp chopped fresh mint
Side Dish Instructions
- Whisk together oil, lime zest, juice, and desired amount of salt and pepper in a large bowl. Add cucumber, onion, cilantro, and mint; toss.
