Bacon and Egg Biscuit Bake

Ingredients

  • 4 frozen buttermilk biscuits (such as Pillsbury)
  • 4 large eggs
  • 1 cup milk
  • 1 (11-oz) can Mexican-style corn with red and green peppers, drained
  •  4 slices bacon, cooked and crumbled
  • 1 cup shredded mozzarella cheese (or use any shredded cheese)

Instructions

  1. Preheat oven to 350°F. Let biscuits stand at room temperature 10 minutes to thaw. Cut each biscuit into 8 pieces.
  2. Whisk eggs and milk until blended. Stir in corn, bacon, and cheese.
  3. Arrange biscuit pieces in a greased 11-x 7-inch baking dish. Pour egg mixture over top, pressing gently with a spoon to be sure all biscuits are covered.
  4. Bake 30 to 35 minutes or until golden brown and eggs are set. Let stand 5 minutes before serving.
