Bacon and Egg Biscuit Bake
Red Pears
Ingredients
- 4 frozen buttermilk biscuits (such as Pillsbury)
- 4 large eggs
- 1 cup milk
- 1 (11-oz) can Mexican-style corn with red and green peppers, drained
- 4 slices bacon, cooked and crumbled
- 1 cup shredded mozzarella cheese (or use any shredded cheese)
Instructions
- Preheat oven to 350°F. Let biscuits stand at room temperature 10 minutes to thaw. Cut each biscuit into 8 pieces.
- Whisk eggs and milk until blended. Stir in corn, bacon, and cheese.
- Arrange biscuit pieces in a greased 11-x 7-inch baking dish. Pour egg mixture over top, pressing gently with a spoon to be sure all biscuits are covered.
- Bake 30 to 35 minutes or until golden brown and eggs are set. Let stand 5 minutes before serving.
