Chocolate-Coconut Chia Pudding

Ingredients

  • 1 (13.5-oz) can unsweetened coconut milk
  • 10 pitted Medjool dates
  • ⅓ cup unsweetened baking cocoa
  • 2 tsp pure vanilla extract
  • ½ tsp salt
  • ⅓ cup chia seeds
  • ½ cup unsweetened shredded coconut

Instructions

  1. Process coconut milk, dates, cocoa, vanilla, and salt in a blender, scraping sides as needed.
  2. Combine milk mixture and chia seeds. Chill overnight.
  3. Toast coconut in a dry skillet over medium-high heat 2 to 3 minutes or until golden and fragrant. Top each serving of pudding with toasted coconut.
