Chia Pudding with Maple-Nut Clusters

Ingredients

  • ¼ cup raw sunflower seeds
  • ½ tsp ground cinnamon
  • ½ cup raw walnut halves
  • 3 Tbsp pure maple syrup, divided
  • ⅓ cup chia seeds
  • 1 (13.5-oz) can unsweetened coconut milk
  • 1 tsp pure vanilla extract
  • ⅛ tsp salt
  • 2 cups sliced strawberries

Instructions

  1. Combine sunflower seeds, cinnamon, and a pinch of salt.
  2. Toast nuts in a dry skillet over medium-high heat 4 to 5 minutes or until fragrant. Add sunflower seed mixture; cook 1 minute, stirring constantly. Add 1½ Tbsp maple syrup; cook 1 minute.
  3. Transfer nut mixture to a baking sheet lined with parchment paper. Cool; break into clusters.
  4. Combine chia seeds, coconut milk, 1½ Tbsp maple syrup, vanilla, and salt. Cover and chill overnight.
  5. Divide pudding mixture among 4 bowls; top with nut clusters and strawberries.
