Chia Pudding with Maple-Nut Clusters

Ingredients
- ¼ cup raw sunflower seeds
- ½ tsp ground cinnamon
- ½ cup raw walnut halves
- 3 Tbsp pure maple syrup, divided
- ⅓ cup chia seeds
- 1 (13.5-oz) can unsweetened coconut milk
- 1 tsp pure vanilla extract
- ⅛ tsp salt
- 2 cups sliced strawberries
Instructions
- Combine sunflower seeds, cinnamon, and a pinch of salt.
- Toast nuts in a dry skillet over medium-high heat 4 to 5 minutes or until fragrant. Add sunflower seed mixture; cook 1 minute, stirring constantly. Add 1½ Tbsp maple syrup; cook 1 minute.
- Transfer nut mixture to a baking sheet lined with parchment paper. Cool; break into clusters.
- Combine chia seeds, coconut milk, 1½ Tbsp maple syrup, vanilla, and salt. Cover and chill overnight.
- Divide pudding mixture among 4 bowls; top with nut clusters and strawberries.
