Apple-Almond Butter Pancakes

Ingredients
- 1 cup almond flour
- ¼ cup coconut flour (or use ¼ cup more almond flour)
- ½ tsp kosher salt
- ½ cup unsweetened coconut milk
- ¼ cup water
- 3 Tbsp coconut oil
- 2 large eggs
- ¼ cup raw honey
- 2 tsp pure vanilla extract
- ½ cup almond butter
- 2 apples, peeled and chopped
- Pure maple syrup
Instructions
- Whisk together dry ingredients in a medium bowl.
- Add coconut milk, water, 2 Tbsp coconut oil, eggs, honey, and vanilla to a food processor. Or use a hand-held mixer to blend well.
- Add dry ingredients to processor, and blend until smooth.
- Heat a large skillet or griddle over medium heat. Add 1 Tbsp coconut oil.
- Pour scant ¼ cupfuls of batter onto a hot skillet or griddle. Cook until tops are covered with bubbles and edges look cooked. Turn and cook 2 minutes on other side.
- For each serving, spread almond butter on one side of pancake; top with another pancake.
- Sprinkle with chopped apples. If desired, drizzle with maple syrup.
