Apple-Almond Butter Pancakes

Ingredients

  • 1 cup almond flour
  • ¼ cup coconut flour (or use ¼ cup more almond flour)
  • ½ tsp kosher salt
  • ½ cup unsweetened coconut milk
  • ¼ cup water
  • 3 Tbsp coconut oil
  • 2 large eggs
  • ¼ cup raw honey
  • 2 tsp pure vanilla extract
  • ½ cup almond butter
  • 2 apples, peeled and chopped
  • Pure maple syrup

Instructions

  1. Whisk together dry ingredients in a medium bowl.
  2. Add coconut milk, water, 2 Tbsp coconut oil, eggs, honey, and vanilla to a food processor. Or use a hand-held mixer to blend well.
  3. Add dry ingredients to processor, and blend until smooth.
  4. Heat a large skillet or griddle over medium heat. Add 1 Tbsp coconut oil.
  5. Pour scant ¼ cupfuls of batter onto a hot skillet or griddle. Cook until tops are covered with bubbles and edges look cooked. Turn and cook 2 minutes on other side.
  6. For each serving, spread almond butter on one side of pancake; top with another pancake.
  7. Sprinkle with chopped apples. If desired, drizzle with maple syrup.
