Slow Cooker 15-Bean Soup
Grilled Apple-Blue Cheese SandwichesIngredients
- 1 (20-oz) pkg 15-bean soup mix (see Note)
- 2 (28-oz) cans no-salt-added fire-roasted diced tomatoes
- 2 (32-oz) cartons low-sodium vegetable broth
- 2 (8-oz) pkg diced organic trinity mix (green bell pepper, onion, and celery)
- 2 large carrots, chopped
- 3 cloves garlic, minced
- 1 tsp salt
- 1 tsp pepper
- 1 Tbsp Italian seasoning
- 8 slices nitrate-free bacon, cooked and coarsely crumbled
Instructions
- Discard seasoning packet from package of beans. Rinse, drain, and transfer beans to a 7-quart slow cooker.
- Top with tomatoes and remaining ingredients except bacon. (Cooker will be full.) Cover and cook on LOW 10 to 12 hours or until beans are tender.
- Sprinkle with bacon before serving.
Side Dish Ingredients
- 12 slices sandwich bread (preferably whole wheat)
- 1½ cups crumbled blue cheese
- 2 organic Granny Smith apples, thinly sliced
- 6 Tbsp unsalted butter
Side Dish Instructions
- Top 6 bread slices each with ¼ cup cheese and several apple slices. Top each with 1 slice of bread to make 6 sandwiches.
- Melt 2 Tbsp butter in a large skillet over medium-high heat; add 2 sandwiches, and cook until golden. Turn and cook other side until golden brown and cheese is melted. Repeat with remaining butter and sandwiches.
