Slow Cooker 15-Bean Soup

Ingredients

  • 1 (20-oz) pkg 15-bean soup mix (see Note)
  • 2 (28-oz) cans no-salt-added fire-roasted diced tomatoes
  • 2 (32-oz) cartons low-sodium vegetable broth
  • 2 (8-oz) pkg diced organic trinity mix (green bell pepper, onion, and celery)
  • 2 large carrots, chopped
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp pepper
  • 1 Tbsp Italian seasoning
  • 8 slices nitrate-free bacon, cooked and coarsely crumbled

Instructions

  1. Discard seasoning packet from package of beans. Rinse, drain, and transfer beans to a 7-quart slow cooker.
  2. Top with tomatoes and remaining ingredients except bacon. (Cooker will be full.) Cover and cook on LOW 10 to 12 hours or until beans are tender.
  3. Sprinkle with bacon before serving.

Side Dish Ingredients

  • 12 slices sandwich bread (preferably whole wheat)
  • 1½ cups crumbled blue cheese
  • 2 organic Granny Smith apples, thinly sliced
  • 6 Tbsp unsalted butter

Side Dish Instructions

  1. Top 6 bread slices each with ¼ cup cheese and several apple slices. Top each with 1 slice of bread to make 6 sandwiches.
  2. Melt 2 Tbsp butter in a large skillet over medium-high heat; add 2 sandwiches, and cook until golden. Turn and cook other side until golden brown and cheese is melted. Repeat with remaining butter and sandwiches.
