Chicken Sausage, Kale, and Apple Sauté

Ingredients

  • 2 (12-oz) pkg fully cooked sweet Italian chicken sausages, sliced
  • 3 Tbsp olive oil
  • 2 organic sweet apples, sliced
  • 1 onion, halved and sliced
  • 1 large bunch organic kale, stemmed and sliced
  • ½ cup low-sodium chicken broth
  • 1 Tbsp low-sodium soy sauce
  • 1 Tbsp balsamic vinegar

Instructions

  1. Cook sausage in hot oil in a Dutch oven over medium-high heat 5 minutes or until browned. Remove sausage, and keep warm.
  2. Add apples and onion to pot; sauté 5 minutes or until tender. Add kale, in batches, and cook 5 minutes or until tender.
  3. Add sausages, broth, soy sauce, and vinegar. Cook 3 minutes or until thoroughly heated.

Side Dish Ingredients

  • 2 lb sweet potatoes, peeled and cut into 2-inch pieces
  • 3 Tbsp butter
  • ⅓ cup milk
  • 1 tsp chopped fresh thyme
  • ½ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Bring potatoes and salted water to cover to a boil in a large saucepan over high heat. Reduce heat, and cook 15 minutes or until potatoes are tender; drain.
  2. Return potatoes to pan; stir in butter. Mash with a potato masher to desired consistency. Stir in milk, thyme, salt, and pepper.
