Pepperoni Pizza Sliders
Cucumber-Tomato Toss
Ingredients
- 1 (12-count) pkg slider buns (preferably whole wheat), split
- 1½ cups natural marinara sauce (such as Rao's)
- 1 (12-oz) pkg sliced bell pepper and onion medley
- 1 cup very thinly sliced mushrooms
- 1 cup shredded part-skim mozzarella cheese
- 1 (4-oz) pkg uncured turkey pepperoni (such as Applegate Naturals)
- 2 Tbsp olive oil
- 2 Tbsp freshly grated Parmesan cheese
Instructions
- Preheat oven to 350°F. Generously coat a 13- x 9-inch baking dish with cooking spray. Arrange bottom buns in dish.
- Spread marinara over buns in dish; top with bell pepper and onion medley, mushrooms, mozzarella, and pepperoni. Cover with bun tops, gently pressing down. Brush with oil, and cover with foil.
- Bake 15 minutes. Uncover, sprinkle with Parmesan, and bake 5 minutes longer or until cheese is melted and sliders are thoroughly heated.
Side Dish Ingredients
- 1 English cucumber, sliced
- 1 pint grape tomatoes
- ½ cup thinly sliced red onion
- ½ cup pitted kalamata olives
- ⅓ cup refrigerated red wine vinaigrette
Side Dish Instructions
- Toss together all ingredients in a large bowl. Chill until ready to serve.
