Huevos Chorizo Hash

Ingredients

  • 4 oz ground chorizo sausage
  • 2 Tbsp olive oil
  • 1 (20-oz) pkg refrigerated diced potatoes with onions
  • 2 (8-oz) pkg diced three-pepper mix
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp pepper
  • 6 large eggs
  • ½ cup reduced-fat sour cream
  • ½ cup fresh salsa

Instructions

  1. Cook chorizo in a large nonstick skillet over medium heat 4 minutes or until browned and crumbly. Drain, reserving drippings in skillet.
  2. Add oil to drippings in skillet. Add potatoes, bell pepper mix, garlic, salt, and pepper; cook, covered, 5 minutes (do not stir). Stir and cook 5 minutes or until browned. Stir in chorizo.
  3. Make 6 indentations in potato mixture. Break 1 egg into each indentation. Cover and cook 5 to 8 minutes or until whites are set and yolks are cooked to desired doneness. Serve with sour cream and salsa.

  • 1 Tbsp fresh lemon juice
  • 1 Tbsp extra virgin olive oil
  • ¼ tsp kosher salt
  • ⅛ tsp crushed red pepper
  • 2 navel oranges, peeled and sectioned
  • 2 blood oranges, peeled and sectioned
  • 2 Tbsp chopped fresh cilantro

Side Dish Instructions

  1. Whisk together lemon juice, oil, salt, and red pepper in a large bowl. Add oranges, and toss. Sprinkle with cilantro.
