Huevos Chorizo Hash
Spicy Orange TossIngredients
- 4 oz ground chorizo sausage
- 2 Tbsp olive oil
- 1 (20-oz) pkg refrigerated diced potatoes with onions
- 2 (8-oz) pkg diced three-pepper mix
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp pepper
- 6 large eggs
- ½ cup reduced-fat sour cream
- ½ cup fresh salsa
Instructions
- Cook chorizo in a large nonstick skillet over medium heat 4 minutes or until browned and crumbly. Drain, reserving drippings in skillet.
- Add oil to drippings in skillet. Add potatoes, bell pepper mix, garlic, salt, and pepper; cook, covered, 5 minutes (do not stir). Stir and cook 5 minutes or until browned. Stir in chorizo.
- Make 6 indentations in potato mixture. Break 1 egg into each indentation. Cover and cook 5 to 8 minutes or until whites are set and yolks are cooked to desired doneness. Serve with sour cream and salsa.
Side Dish Ingredients
- 1 Tbsp fresh lemon juice
- 1 Tbsp extra virgin olive oil
- ¼ tsp kosher salt
- ⅛ tsp crushed red pepper
- 2 navel oranges, peeled and sectioned
- 2 blood oranges, peeled and sectioned
- 2 Tbsp chopped fresh cilantro
Side Dish Instructions
- Whisk together lemon juice, oil, salt, and red pepper in a large bowl. Add oranges, and toss. Sprinkle with cilantro.
