Pan-Seared Grouper with Oranges and Olives

Ingredients

  • 2 (6-oz) grouper fillets (or use cod)
  • 1 Tbsp olive oil
  • 1½ oranges
  • 1 Tbsp thinly sliced shallot
  • 3 Tbsp pitted green olives, halved
  • 1 tsp chopped fresh rosemary
  • ⅛ tsp crushed red pepper

Instructions

  1. Season fish lightly with salt and pepper. Cook fish in hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes per side. Remove from skillet, and keep warm.
  2. Meanwhile, grate zest and squeeze juice from orange half. Peel and section remaining whole orange.
  3. Add shallot, orange juice and zest, orange sections, olives, rosemary, and red pepper to skillet. Cook 2 to 4 minutes or until liquid is slightly thickened. Serve sauce over fish.

  • ¾ lb broccoli rabe, trimmed
  • 1 small clove garlic, minced
  • Pinch of crushed red pepper
  • ½ Tbsp olive oil
  • ½ Tbsp fresh lemon juice
  • ⅛ tsp salt

Side Dish Instructions

  1. Preheat oven to 425°F. Combine all ingredients on a rimmed baking sheet; spread in a single layer. Bake 10 minutes or until broccoli rabe is browned and crisp-tender.
