Sweet-and-Salty Honey-Glazed Shrimp

Ingredients

  • ¼ cup honey
  • ¼ cup low-sodium soy sauce
  • 1 clove garlic, minced
  • 1½ tsp minced ginger
  • 1 lb peeled and deveined, large raw shrimp
  • 1 Tbsp olive oil
  • 1 tsp toasted sesame seeds (optional)

Instructions

  1. Combine honey, soy sauce, garlic, and ginger. Place shrimp in a large zip-top plastic bag; add half of honey mixture. Let stand 15 minutes; discard marinade.
  2. Cook shrimp in hot oil in a large skillet over medium heat 2 minutes per side. Pour remaining half of honey mixture over shrimp; cook 1 minute or until shrimp turn pink. Sprinkle with sesame seeds. Serve over soba noodles.

Side Dish Ingredients

  • ½ (8-oz) pkg soba noodles
  • ½ (16-oz) pkg angel hair coleslaw
  • ¼ cup gluten-free Thai peanut sauce (such as San-J)
  • 3 Tbsp roasted, salted peanuts

Side Dish Instructions

  1. Cook noodles according to package directions, adding slaw during last 1 minute of cooking; drain. Toss with peanut sauce; sprinkle with nuts.
