Ingredients

  • 2 (6.9-oz) pkg chicken-flavored rice mix
  • 3 Tbsp butter
  • 1½ lb boneless, skinless chicken breasts, cut into bite-size pieces
  • 1 green bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 1½ tsp garlic salt
  • 1 tsp pepper
  • 1 (8-oz) pkg shredded mozzarella cheese

Instructions

  1. Prepare rice according to package directions. Meanwhile, melt butter in a large skillet over medium heat. Add chicken, bell pepper, onion, garlic salt, and pepper; cook, stirring occasionally, 5 to 6 minutes or until chicken is done and vegetables are tender.
  2. Stir rice into chicken mixture. Sprinkle with cheese; cover and cook 2 minutes or until cheese is melted.
