Sheet Pan Spicy Chicken and Broccoli

Ingredients

  • ½ cup butter, melted
  • 1½ lb boneless, skinless chicken breasts, cut into bite-size pieces
  • 1 head broccoli, cut into florets
  • 1 (0.7-oz) envelope zesty Italian dressing mix
  • ½ tsp crushed red pepper
  • 2 lemons, thinly sliced
  • ½ cup chopped fresh parsley

Instructions

  1. Preheat oven to 450°F. Toss together butter, chicken, broccoli, dressing mix, and red pepper in a large bowl.
  2. Arrange lemon slices on a large parchment-lined rimmed baking sheet; pour chicken mixture over lemons, and spread in an even layer.
  3. Bake 15 to 20 minutes or until chicken is done; sprinkle with parsley, and serve over rice.

  • 2 cups long-grain white rice
  • 1 Tbsp vegetable oil
  • ¼ cup chopped fresh basil

Side Dish Instructions

  1. Cook rice according to package directions; stir in oil and basil. Season with salt and pepper to taste.
