Italian Chicken Sandwiches
Lemon-Roasted Potatoes
Ingredients
- 6 (6-oz) boneless, skinless chicken breasts
- 1 Tbsp olive oil
- 1 Tbsp Italian seasoning
- 2 tomatoes, thinly sliced
- 1 (8-oz) pkg sliced provolone cheese
- 1 (24-oz) can marinara sauce, heated
- 6 hamburger buns, split and toasted
- 1 (1-oz) pkg fresh basil, separated into leaves
Instructions
- Preheat grill or grill pan to medium-high heat. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Brush chicken with oil, and sprinkle with Italian seasoning.
- Grill chicken, covered, 5 to 6 minutes per side or until done. Slice chicken, if desired. Top each chicken breast with tomatoes and cheese. Cover and let stand 1 minute or until cheese is melted.
- Spread marinara on bottom buns. Serve chicken on buns with basil and remaining marinara sauce.

- 2 lb red potatoes, quartered
- ½ cup sliced onion
- ¼ cup olive oil
- 1 tsp garlic salt
- ½ tsp pepper
- 2 Tbsp fresh lemon juice
Side Dish Instructions
- Preheat oven to 400°F. Toss together potatoes, onion, oil, garlic salt, and pepper. Spread on a rimmed baking sheet. Bake 25 to 30 minutes. Drizzle with lemon juice.
