Fire-Roasted Tomato and Beef Soup

Ingredients

  • 2 lb ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (28-oz) can fire-roasted diced tomatoes
  • 3 zucchini, cubed
  • 1 (48-oz) carton beef broth
  • 1 Tbsp Italian seasoning

Instructions

  1. Cook beef, onion, bell pepper, and garlic in a large Dutch oven over medium heat until beef is browned and crumbly. Drain and return to pot.
  2. Stir in tomatoes, zucchini, broth, and seasoning; bring to boil. Reduce heat, and simmer 15 minutes or until zucchini is tender. Season with salt and pepper to taste.

Side Dish Ingredients

  • 1 (5-oz) carton shredded Parmesan cheese
  • ¼ cup butter, softened
  • 1 (16-oz) loaf French bread, cut into 1-inch-thick slices

Side Dish Instructions

  1. Preheat broiler. Stir together cheese and butter; spread over bread. Place on a baking sheet. Broil 2 minutes or until toasted.
