Baked Dijon Salmon
Broccoli with Garlic Butter and Cashews
Ingredients
- ¼ cup butter, melted
- 3 Tbsp Dijon mustard
- 1½ Tbsp honey
- ¼ cup dry bread crumbs
- ¼ cup finely chopped pecans
- 4 tsp chopped fresh parsley
- 4 (4-oz) salmon fillets
- Salt and pepper to taste
- 1 lemon, for garnish
Instructions
- Preheat oven to 400°F.
- In a small bowl, stir together butter, mustard, and honey. Set aside. In another bowl, mix together bread crumbs, pecans, and parsley.
- Brush each salmon fillet lightly with honey mustard mixture and sprinkle the tops of the fillets with the bread crumb mixture.
- Bake salmon 12 to 15 minutes in the preheated oven, or until it flakes easily with a fork. Season with salt and pepper, and garnish with a wedge of lemon.
Side Dish Ingredients
- 1 lb fresh broccoli, cut into bite size pieces
- 3 Tbsp and 1¾ tsp butter
- 2 tsp brown sugar
- 2 Tbsp soy sauce
- 1¼ tsp white vinegar
- ⅛ tsp ground black pepper
- 1¼ cloves garlic, minced
- 3 Tbsp and 1¾ tsp chopped salted cashews
Side Dish Instructions
- Place the broccoli into a large pot with about 1 inch of water in the bottom. Bring to a boil, and cook for 7 minutes, or until tender but still crisp. Drain, and arrange broccoli on a serving platter.
- While the broccoli is cooking, melt the butter in a small skillet over medium heat. Mix in the brown sugar, soy sauce, vinegar, pepper and garlic. Bring to a boil, then remove from the heat. Mix in the cashews and pour the sauce over the broccoli. Serve immediately.
