Turkey-Bacon Meatballs with Tomato Sauce

Ingredients

  • 2 lb lean ground turkey
  • 6 slices bacon, cooked and crumbled
  • 1 (8-oz) pkg sliced mushrooms, finely chopped
  • 1 large onion, chopped
  • 1 Tbsp Italian seasoning
  • 1 large egg, lightly beaten
  • 2 Tbsp olive oil
  • 2 (14.5-oz) cans fire-roasted diced tomatoes

Instructions

  1. Combine turkey, bacon, mushrooms, onion, seasoning, and egg; shape into 1-inch meatballs.
  2. Cook meatballs in hot oil in a large, deep nonstick skillet over medium heat 4 minutes or until browned and no longer pink in centers, stirring often. Remove from skillet; keep warm.
  3. Add tomatoes to skillet; bring to a boil, and simmer 15 minutes or until slightly thickened. Add meatballs; cover and simmer 5 minutes or until thoroughly heated.

Side Dish Ingredients

  • 3 Tbsp olive oil
  • 2 Tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • ½ tsp salt
  • 1 tsp pepper
  • 1 clove garlic, minced
  • 1 (18-oz) pkg chopped romaine lettuce
  • 2 Tbsp grated Parmesan cheese

Side Dish Instructions

  1. Whisk together oil, lemon juice, mustard, salt, pepper, and garlic. Add lettuce; toss. Sprinkle with cheese before serving.
