Skillet Mac-and-Cheese Pizza

Ingredients

  • 1 (16-oz) pkg elbow macaroni
  • ¼ cup butter
  • ¼ cup all-purpose flour
  • 2 cups milk
  • 1 cup pizza sauce
  • 1 (8-oz) pkg shredded mozzarella cheese
  • ¾ cup sliced pepperoni
  • ¼ cup panko breadcrumbs
  • ¼ cup shredded Parmesan cheese

Instructions

  1. Preheat oven to 400°F. Cook pasta according to package directions.
  2. Meanwhile, melt butter in a large, deep ovenproof skillet over medium heat. Add flour; cook, whisking constantly, 2 minutes. Gradually whisk in milk until smooth. Cook, whisking constantly, 6 minutes or until thickened and bubbly. Stir in pizza sauce.
  3. Gradually stir in cheese until melted. Add pasta, stirring to coat. Arrange pepperoni over pasta. Stir together panko and Parmesan; sprinkle over pepperoni. Bake 10 to 15 minutes or until hot and bubbly.

  • 2 (12-oz) pkg frozen green beans
  • 2 Tbsp butter
  • ¼ cup slivered almonds
  • 2 Tbsp fresh lemon juice

Side Dish Instructions

  1. Steam green beans according to package directions.
  2. Melt butter in a large skillet over medium heat; add nuts, and cook, stirring occasionally, until toasted. Add green beans and lemon juice; toss and season with salt and pepper to taste.
