Citrus-Roasted Chicken and Vegetables

Ingredients

  • 2 lb boneless, skinless chicken breasts, halved crosswise
  • 1 lime
  • 2 oranges
  • 1 lb russet potatoes, cut into wedges
  • 1 onion, cut into wedges
  • 1 green bell pepper, sliced
  • 4 cloves garlic, minced
  • ¼ cup olive oil
  • ¼ cup chopped fresh cilantro
  • ¼ cup chopped fresh oregano
  • 2 tsp ground cumin

Instructions

  1. Preheat oven to 425°F. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Grate zest and squeeze juice from lime and 1 orange. Thinly slice 1 orange.
  3. Toss together all ingredients in a large bowl. Arrange in a single layer on a large rimmed baking sheet. Season lightly with salt and pepper.
  4. Bake 35 to 40 minutes or until chicken is done and potatoes are tender.
